Phillip & Shurie Scheel have partnered with Bradyn & Shailee Harvey to open up Kirby Creek Mercantile in downtown Thermopolis. They are a retail and food establishment.
They decided to create their business about a year ago and they purchased the property from Jackie and Michael Wright. Phillip and Bradyn’s combined backgrounds in construction led them to be able to do most of the building renovations.
“We decided to do as much of a rebuild ourselves as possible, little did we know nine months later we’d have a totally remodeled 1902 building,” said Bradyn.
Bradyn added, “When we first started the renovations we wanted to support local businesses as much as possible so we focused on that.”
Phillip said, “We did our best to preserve the historical components as well as make it extremely functional for 2020.”
They did their first public event on New Year’s Eve and held a themed party.
Regarding their food selection, Shurie said, “Our number one seller of baked goods right now is pecan rolls and the pain au chocolate (a French chocolate danish), along with the apple fritters.” In addition, they offer paninis and crepes as well as sandwiches.
For their plans for this year, Shurie said they hope to have a more expanded menu. Currently they are doing danishes, croissants, the bread of the day, cinnamon rolls, caramel rolls and peanut butter rolls.
Shurie added, “We hope to add online ordering soon.” The public can find them at https://www.kirbycreekmercantile.com/. They are open at 7 a.m. - 8 p.m. seven days a week at 535 Broadway Street.
Not only did the Scheel’s and Harvey’s start their business but Shailee gave birth to their son Lincoln the same day they opened for business.
